5 minute mexican skillet

Ok, you all are going to think I am crazy.

You may even think I deprive my husband of good meals.

But I promise you, this meal is good. And he likes it. At least he says he does.

I found the recipe on the back packaging of some queso quesadilla cheese. I swear it was a gift from God. I couldn't even tell you the brand, it was so long ago.

It's ugly. It looks like slop on a plate. There is no possible way to make this recipe look pretty. But it's oh so good. And it's gluten free for all you fellow gluten free dieters out there.

And I am sure it's healthy too.. errr uhh... in some ways. Maybe not.

I love it mostly because it's tasty and only takes 5 minutes.

Introducing one of my favorite go to quick recipes of all time........




To start out with you need :


  • 1 Cup of mild salsa
  • 4 Oz Queso Quesadilla Cheese Shredded (Colby jack or chedder will work.. just not as creamy)
  • 3-4 Handfuls of gluten free tortilla chips (I used Tostitos Cantina style.. they are labeled GF)
  • 12-18 Oz Can cooked chicken breast (I have yet to find a can that is the same size as another brand)
  • Few dallops of sour cream



To begin, pull out a large skillet and get it going on medium heat. Toss in your can of chicken and cup of salsa. Stir and break up the bits of chicken so it looks shredded. 


Once the salsa is bubbling, that means the chicken and salsa is nice and warm. Grab a handful of chips and break into pieces over the skillet. Repeat this 3-4 times until the salsa/chicken mixture is evenly covered with chips.


Immediately sprinkly on your cheese and cover for a minute until cheese is melted.



Once cheese is melted, serve immediately and dallop with some sour cream. The sour cream is the most important part! I tried it without. It's just not the same. I don't care if you're on a diet. Use low fat then. You have to have the sour cream.


And that's it folks! 5 minutes. Tops.

It only yields 2-3 servings. Maybe more if you serve it with a side. Sometimes I garnish with green onions or parsely. Try serving it with some spanish rice. I can't think of any other sides. Ideas?

Let me know what you think! I made this a lot when we were busy building the house. I doubled the batch and served it to our contractor and his employees. They loved it so it's definitely man approved. Most men anyways. My father in law and brother probably wouldn't touch it with a 10 foot pole. :)

This does not re-heat well. Nor does it taste very good after sitting a while. The chips get soggy. So, eat it now!
